The way to see if the opal is a doublet is to check the edge of the opal to see if there is a glues line between the opal color and the potch on the back. If their is you will find that it is a doublet. Some opal jewelry settings hide the sides of the opal and can make it hard to tell if it is a real solid.

This phenomena has been happening for years and stones of up to $50,000 have been mistaken, when they were really doublets.
